Collection: Sourdough

We offer a variety of sourdough loaves. Our breads are a traditionally made sourdough using wild yeast and fermentation. What really sets our loaves apart, however, is that we use cheese whey in place of water in our recipe. Kayla makes her own ricotta and mozzarella cheeses and with this comes a lot of whey. Using whey in our sourdough loaves increases the available nutrients in the loaves which results in a crispier crust with softer crumb. In addition, it provides a hint of sweetness to the loaves that deliciously contrasts with the natural sour flavor of the fermented dough. Each loaf is hand formed and allowed to bulk ferment for a full day to allow the flavor to develop.

 

Availability varies weekly. If you would like a specific loaf, please let us know by Wednesday for weekend pickup from our farm or from the farmer's market.
